Bramacare – Meet our chef

Nico is the Chef at Bramacare, serving freshly prepared meals for patients at The White House.

Nico explains about his role, working with our dietician to help patients eat well towards their recovery.

“At The White House we offer patients a seasonal menu of 12 meals which they can chose from each week – including breakfast, lunch, dinner and two snacks. Everyone eats together in our dining room, supported by the Bramacare team.

“All our meals are freshly prepared every day and I work hard with the dietician to ensure patients have a good variety of fruit, vegetables, meat, fish and vegetarian options. I am advised on each individual’s meal plan, dietetic needs and their own personal tastes, likes and dislikes. Every single meal can help a patient towards their recovery, so I use fresh ingredients to offer an important balance of nutritional value and food variety.

“I also work closely with patients 1-2-1 in the kitchen. Our patients get involved with cooking their own meals and learning new recipes. We have a homely country-style kitchen here at The White House where patients feel comfortable practicing independent living.

“Being a Chef at The White House is a really interesting role. Previously I spent 12 years working in professional kitchens, including Selfridges in London and Hilton Hotel in Birmingham. Here at Bramacare, I enjoy being creative to make meals appealing and exciting, taking care with the presentation of every dish. It’s really rewarding when I see patients approaching different foods for the first time, as they take steps to gradually enjoy mealtimes again.”
